An exquisite layer cake featuring silky white chocolate, fresh cherries, and light whipped cream. This White Forest Cake is a delightful twist on the classic, perfect for any celebration.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 cup white chocolate chips
  • 1 cup heavy whipping cream
  • 1 jar (about 12 oz) maraschino cherries, drained
  • Additional cherries for decoration (optional)
  • Chocolate shavings (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the all-purpose flour and baking powder. Set aside.
  3. In another bowl, beat the softened butter and sugar together until light and fluffy.
  4. Incorporate the eggs, vanilla extract, and almond extract into the butter-sugar mixture, mixing well until fully combined.
  5. Alternately add the dry ingredients and milk to the wet mixture, beginning and ending with the dry ingredients. Mix until smooth.
  6. Fold in the white chocolate chips gently, allowing them to distribute evenly through the batter.
  7. Pour the batter evenly into the prepared cake pans for your White Forest Cake.
  8. Bake for 30-35 minutes. To check for doneness, insert a toothpick into the center of the cakes; it should come out clean.
  9. Once baked, allow the cakes to cool in their pans for about 10 minutes. Then, transfer them to wire racks to cool completely.
  10. In a chilled bowl, whip the heavy cream until soft peaks form. You can sweeten it with a bit of sugar if desired.
  11. Place one layer of cake on a serving platter. Spread a layer of whipped cream on top and distribute a layer of maraschino cherries for your White Forest Cake.
  12. Place the second cake layer on top. Frost the entire cake with the remaining whipped cream.
  13. Garnish the top with additional cherries and chocolate shavings if desired for your White Forest Cake.

Notes

  • For best results, use fresh ingredients.
  • Chill your mixing bowl and beaters before whipping cream for a sturdier whipped cream.
  • Experiment with different fruit fillings or sponge cakes for personalized flair.
  • Allow cake layers to cool completely to prevent the whipped cream from melting.
  • Consider adding cherry liqueur for an adult twist.
  • This cake can be adapted for gluten-free or dairy-free diets.
  • Cherries can be substituted with strawberries or peaches.
