Ingredients

Scale
  • For the White Chocolate Mousse:
  • 2 egg yolks
  • 2 tablespoons granulated sugar
  • 1 cup heavy cream
  • 80 grams real white chocolate
  • For the Tart Shell:
  • 350 grams all-purpose flour
  • 125 grams unsalted butter (cold, cubed)
  • 125 grams sugar
  • 2 eggs + 1 egg yolk
  • Pinch of salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cinnamon

Instructions

  1. Prepare the Mousse Base: Beat egg yolks and sugar until pale and smooth. Heat 1/4 cup of cream, pour over egg yolk mixture, stir, and return to heat. Cook until thickened to coat a spoon.
  2. Melt the Chocolate: Pour the thickened egg yolk mixture over chopped white chocolate. Stir until completely melted and smooth. Set aside to cool.
  3. Whip the Remaining Cream: Beat the remaining heavy cream until stiff peaks form. Gently fold the whipped cream into the cooled chocolate mixture. Refrigerate the mousse.
  4. Prepare the Tart Shell Dough: Preheat oven to 190ºC (374ºF). Pulse flour, salt, cayenne pepper, and cinnamon in a food processor. Add butter and pulse until crumbly. Add sugar, eggs, and egg yolk; pulse until dough forms.
  5. Form the Tart Shells: Knead dough briefly on a floured surface. Roll to 1/4 inch thick. Line tartlet pans, pressing gently. Trim excess dough and refrigerate for 10-15 minutes.
  6. Bake the Tart Shells: Bake for 15-20 minutes until golden brown and crisp. Let cool completely.
  7. Assemble the Tartlets: Spoon white chocolate mousse into cooled tart shells. Smooth the tops. Garnish if desired.
  8. Chill and Serve: Refrigerate for at least 1 hour to set before serving.

Notes

  • Store tartlets in the refrigerator for up to 3 days. Best enjoyed fresh.
  • Muffin tins can be used as an alternative to tartlet pans.
  • Chill tart shells before baking to prevent shrinking.
  • Ensure mousse cools completely before folding in whipped cream for a smooth texture.
  • Consider adding vanilla extract or orange zest for flavor variations.
