Whimsical Unicorn Berry Pie is a delightful dessert filled with colorful berries and topped with a playful lattice crust.

  • 1 pre-made pie crust (store-bought or homemade)
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Rainbow sprinkles (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the strawberries, blueberries, and raspberries.
  3. Add sugar, cornstarch, lemon juice, and vanilla extract to the berries. Gently toss to combine.
  4. Roll out your pie crust and fit it into a 9-inch pie pan. Trim any excess crust.
  5. Pour the berry mixture into the prepared pie crust, spreading it evenly.
  6. Roll out another piece of pie crust, slice it into strips, and create a lattice pattern on top of the berries.
  7. In a small bowl, whisk together the egg and milk. Brush the egg wash over the lattice crust.
  8. Bake for 40-45 minutes, or until the crust is golden and the filling is bubbling.
  9. Allow the pie to cool for at least 30 minutes before slicing.
  10. Sprinkle rainbow sprinkles over the top just before serving.

Notes

  • Let the pie cool completely for a better slice.
