A cozy and comforting vegetable stew with herby dumplings, featuring tender carrots, potatoes, celery, and peas simmered in a rich vegetable broth and topped with fluffy parsley and thyme dumplings.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 3 medium potatoes, peeled and cubed
  • 1 cup frozen peas
  • 4 cups vegetable broth
  • 1 1/2 teaspoons salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup milk
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Place a large heavy pot over medium heat and add olive oil.
  2. In a mixing bowl, stir together flour, baking powder, parsley, thyme, and a pinch of salt. Add melted butter and milk, then mix gently until just combined. Set aside.
  3. In the pot, sauté onion, garlic, carrots, and celery for about 5 minutes until softened.
  4. Add potatoes and vegetable broth. Stir in salt and black pepper. Bring to a gentle boil, then reduce heat and simmer for 15 minutes until potatoes are nearly tender.
  5. Stir in frozen peas. Drop spoonfuls of dumpling dough evenly over the simmering stew. Cover and cook for 15 minutes without lifting the lid, until dumplings are puffed and cooked through.
  6. Taste and adjust seasoning if needed. Let the stew rest for 5 minutes off the heat.
  7. Ladle into bowls, ensuring each serving includes vegetables and at least one dumpling.
