A comforting and nutritious vegetable soup packed with tender cabbage and a medley of fresh vegetables, simmered in a flavorful broth. This easy cabbage soup is perfect for a light yet satisfying meal, offering a vibrant taste of garden goodness.

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups green cabbage, chopped
  • 1 medium zucchini, diced
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1½ teaspoons salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add onions, carrots, and celery. Sauté for 5–7 minutes until softened. Stir in garlic and cook for 1 more minute.
  3. Add the chopped cabbage and zucchini to the pot, stirring well.
  4. Pour in diced tomatoes (with juice) and vegetable broth. Add thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes until vegetables are tender.
  6. Remove the bay leaf. Stir in lemon juice and fresh parsley.
  7. Ladle into bowls and enjoy.

Notes

  • For a heartier soup, add cooked lentils or white beans.
  • A parmesan rind can be added during simmering for extra umami (omit if vegan).
  • Stir in a handful of spinach at the end for added greens.
  • Ensure the soup is completely cooled before freezing for best results.
