2 cups long grain rice, rinsed and drained
1 pound ground lamb
1 large onion, finely chopped
1 medium carrot, diced small
3 cloves garlic, minced
3 cups chicken or vegetable broth, warm
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon ground cumin
1/2 teaspoon ground allspice
1 teaspoon salt, or to taste
1/2 teaspoon black pepper
1/4 cup pine nuts, lightly toasted
1/4 cup fresh parsley, chopped
Instructions
Place a large heavy bottomed pot over medium heat.
Add olive oil and butter. Once melted, add chopped onion and cook until soft and lightly golden. Stir in garlic and diced carrot and cook for 2 minutes.
Add ground lamb and cook until browned, breaking it apart with a spoon. Stir in cumin, allspice, salt, and black pepper.
Add rinsed rice and stir gently to coat the grains. Toast for about 2 minutes.
Pour in warm broth and bring to a gentle simmer. Cover, reduce heat to low, and cook for 15 to 18 minutes until liquid is absorbed and rice is tender.
Remove from heat and let sit covered for 5 minutes. Fluff gently with a fork.
Stir in toasted pine nuts and chopped parsley, then serve warm.
