- 1 whole chicken (about 3–4 pounds)
- 8 cups chicken broth
- 2 cups water
- 2 cups celery, diced
- 2 cups carrots, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt (for dumplings)
- 2 tablespoons butter, melted
- 1 cup milk
- Fresh parsley, chopped (for garnish)
- In a large pot, combine the whole chicken, chicken broth, and water. Bring to a boil over medium-high heat.
- Add diced celery, sliced carrots, chopped onion, minced garlic, thyme, bay leaf, salt, and pepper. Reduce heat to low and simmer for 60 minutes.
- Carefully remove the chicken from the pot. Let it cool, then shred the meat, discarding the bones and skin.
- In a medium bowl, combine flour, baking powder, and 1 teaspoon of salt. Stir in melted butter and milk until a dough forms.
- Add shredded chicken back into the pot with the broth and vegetables.
- Using a spoon, drop spoonfuls of dumpling dough into the simmering soup. Allow them to float to the top.
- Cover the pot and simmer for an additional 15 minutes, or until the dumplings are cooked through.
- Taste the soup and adjust seasonings, adding more salt and pepper as needed.
- Remove the bay leaf. Ladle the soup into bowls and garnish with fresh chopped parsley before serving.
