Traditional Chicken Noodle Dumpling Soup is a comforting dish that brings warmth and satisfaction.

  • 1 whole chicken (about 34 pounds)
  • 8 cups chicken broth
  • 2 cups water
  • 2 cups celery, diced
  • 2 cups carrots, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt (for dumplings)
  • 2 tablespoons butter, melted
  • 1 cup milk
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, combine the whole chicken, chicken broth, and water. Bring to a boil over medium-high heat.
  2. Add diced celery, sliced carrots, chopped onion, minced garlic, thyme, bay leaf, salt, and pepper. Reduce heat to low and simmer for 60 minutes.
  3. Carefully remove the chicken from the pot. Let it cool, then shred the meat, discarding the bones and skin.
  4. In a medium bowl, combine flour, baking powder, and 1 teaspoon of salt. Stir in melted butter and milk until a dough forms.
  5. Add shredded chicken back into the pot with the broth and vegetables.
  6. Using a spoon, drop spoonfuls of dumpling dough into the simmering soup. Allow them to float to the top.
  7. Cover the pot and simmer for an additional 15 minutes, or until the dumplings are cooked through.
  8. Taste the soup and adjust seasonings, adding more salt and pepper as needed.
  9. Remove the bay leaf. Ladle the soup into bowls and garnish with fresh chopped parsley before serving.

Notes

  • This soup can be stored in the refrigerator for up to 3 days.
  • Leftover dumplings can be reheated in the soup.
