1.5 pounds chicken thighs (boneless, skinless)
1/4 cup soy sauce
1/4 cup honey
2 tablespoons sriracha sauce (adjust for spice)
3 cloves garlic (minced)
1 tablespoon fresh ginger (grated)
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon cornstarch
2 tablespoons water
1 tablespoon green onions (chopped, for garnish)
Sesame seeds (for garnish)
Instructions
In a bowl, mix together soy sauce, honey, sriracha sauce, minced garlic, grated ginger, rice vinegar, and sesame oil.
Place the chicken thighs in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Marinate for at least 15 minutes, or up to 2 hours for deeper flavor.
Preheat your oven to 400°F (200°C).
Place the marinated chicken on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the chicken is cooked through and has a nice glaze.
In a small saucepan, combine the remaining marinade with cornstarch and water. Heat over medium heat, stirring until it thickens.
Once the chicken is cooked, remove it from the oven. Brush the thickened sauce over the chicken for an extra layer of flavor.
