  • 1 cup ripe mango, pureed (fresh or frozen)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Sliced green onions, for garnish

Instructions

  1. In a bowl, mix the mango puree, soy sauce, honey, rice vinegar, minced ginger, and minced garlic. Stir until well combined.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. In a large skillet, heat the vegetable oil and sesame oil over medium-high heat until shimmering.
  4. Add the chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until golden brown and cooked through.
  5. In a small bowl, mix the cornstarch and water to create a slurry. Once the chicken is cooked, pour the mango glaze into the skillet.
  6. Bring the sauce to a simmer. Add the cornstarch slurry to the glaze and stir until the sauce thickens, about 2-3 minutes.
  7. Once the sauce has thickened, toss the cooked chicken in the glaze until well coated.
  8. Remove from heat and let the chicken rest for a few minutes. Garnish with fresh cilantro and sliced green onions before serving.
