2 cups all-purpose flour
1 ½ cups granulated sugar
½ cup unsalted butter, softened
3 large ripe bananas, mashed
3 large eggs
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon vanilla extract
1 cup buttermilk
1 cup chopped walnuts or pecans (optional)
8 ounces cream cheese, softened
2 cups powdered sugar
1 cup heavy whipping cream
1 teaspoon vanilla extract (for whipped cream)
Maraschino cherries for topping
Chocolate syrup for drizzling
Additional sliced bananas for garnish
Instructions
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together the flour, baking powder, baking soda, and salt.
In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the mashed bananas, eggs, and vanilla extract. Mix until well combined.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined; do not overmix.
If using, gently fold in the chopped walnuts or pecans.
Pour the batter evenly into the prepared cake pans.
Place in the preheated oven and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow the cakes to cool in their pans for 10 minutes. Then transfer to wire racks to cool completely.
In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and mix until well combined.
In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of cream cheese frosting on top. Add the second layer and frost the top and sides of the cake with the remaining frosting.
Decorate the top with sliced bananas, drizzle with chocolate syrup, and top with maraschino cherries.
