1 cup onion, chopped
2 cloves garlic, minced
2 cups shredded cheddar cheese
1 cup sour cream
3 large eggs
1 cup breadcrumbs
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
Start by preheating your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent.
Add the sliced zucchinis to the skillet. Cook until they are tender, about 5-7 minutes. Stir occasionally.
In a large bowl, combine the sautéed zucchini mixture, shredded cheddar cheese, sour cream, eggs, salt, black pepper, and oregano. Stir until well mixed.
