4 boneless, skinless chicken breasts
1/4 cup extra-virgin olive oil
4 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Juice of 1 lemon
Zest of 1 lemon
Salt and pepper to taste
Optional: cherry tomatoes and zucchini for grilling
Instructions
In a bowl, whisk together olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, lemon zest, salt, and pepper.
Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes.
Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly heated.
Prepare Optional Vegetables: If using cherry tomatoes and zucchini, wash and cut them into appropriate sizes for grilling. Toss them in a little olive oil, salt, and pepper.
