  • 4 chicken thighs, bone-in and skin-on
  • 4 slices bacon, chopped
  • 3 shallots, finely sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Season the chicken thighs with salt and pepper on both sides.
  2. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
  3. In the same skillet, add olive oil if needed, and sear the chicken thighs skin-side down for about 5-7 minutes, until golden brown. Flip and cook for another 5 minutes. Remove and set aside.
  4. In the same skillet, add the sliced shallots and cook for 3-4 minutes until soft. Add minced garlic and sauté for an additional minute.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
  6. Stir in the heavy cream, Dijon mustard, and fresh thyme. Bring to a gentle simmer.
  7. Return the chicken and cooked bacon to the skillet, nestling them into the sauce. Cook for about 20-25 minutes, or until the chicken is cooked through and tender.
  8. Taste the sauce and adjust seasoning with additional salt and pepper if needed.
  9. Remove from heat, garnish with fresh parsley, and serve warm.
