  • 1 pound Italian Sausage (sweet or hot)
  • 2 tablespoons Olive Oil
  • 1 Red Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 1 Yellow Bell Pepper, sliced
  • 2 Large Onions, sliced
  • 3 cloves Garlic, minced
  • ½ cup Crushed Tomatoes (optional)
  • ¼ cup Dry White Wine or Chicken Broth
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ½ teaspoon Dried Oregano
  • A pinch Red Pepper Flakes (optional)
  • 2 tablespoons Fresh Basil or Parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sausages and brown on all sides for 7–8 minutes. Remove from skillet and set aside.
  3. In the same skillet, add sliced onions and peppers. Sauté until softened and slightly caramelized, about 10 minutes.
  4. Stir in minced garlic, dried oregano, salt, black pepper, and optional red pepper flakes.
  5. Add white wine or chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
  6. Return the browned sausages to the skillet. If using, add crushed tomatoes.
  7. Cover the skillet and simmer for 10–12 minutes, or until the sausages are cooked through and the flavors have melded.
  8. Garnish with fresh chopped basil or parsley before serving.
  9. Serve your sausage peppers and onions dish hot, over pasta, rice, or in sandwich rolls.
