Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another large bowl, whisk together the buttermilk, vegetable oil, eggs, vanilla extract, and red food coloring until smooth.
  4. Gradually add the dry ingredient mixture into the wet ingredients, mixing until fully combined and no lumps remain.
  5. Using a cookie scoop, drop even mounds of batter onto the prepared baking sheet, leaving about 2 inches of space between each mound.
  6. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cakes spring back when lightly touched.
  7. Once done, remove them from the oven and allow the whoopie pies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. While the cakes are cooling, prepare the cream cheese filling. In a large bowl, beat the softened butter and cream cheese together until smooth. Gradually add the powdered sugar until well combined. Stir in the vanilla extract.
  9. Spread or pipe a generous amount of the cream cheese filling onto the flat side of one cooled whoopie pie. Top with another pie, flat side down, to create a sandwich.
  10. Continue the process until all whoopie pies are filled.
