2 fillets of red snapper
1 cup shrimp, peeled and deveined
1 cup grits (stone-ground preferred)
4 cups water or chicken broth
1 cup heavy cream
1 tablespoon Cajun seasoning
2 tablespoons butter
1 tablespoon olive oil
1 garlic clove, minced
1/2 cup green onions, chopped
Salt and pepper to taste
Lemon wedges for garnish
Fresh parsley for garnish
Instructions
In a saucepan, bring 4 cups of water or chicken broth to a boil. Gradually whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring frequently until thickened.
Once the grits are cooked, stir in the heavy cream and butter. Season with salt and pepper to taste. Keep warm on low heat.
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the shrimp and Cajun seasoning. Cook until shrimp are pink and opaque, about 3-4 minutes. Remove from the skillet and set aside.
In the same skillet, add a little more olive oil if needed. Place the red snapper fillets skin-side down and season with salt and pepper. Cook for about 4-5 minutes per side or until the fish flakes easily with a fork.
Once both the shrimp and fish are cooked, gently fold the shrimp into the creamy grits.
Spoon the shrimp and grits onto a plate. Top with a red snapper fillet and sprinkle with chopped green onions and parsley.
Serve with lemon wedges for an extra burst of flavor.
