  • 1 cup Brown Sugar, packed
  • 1/2 cup Granulated Sugar
  • 1 cup Pumpkin Puree
  • 1 large Egg
  • 2 teaspoons Vanilla Extract
  • 1 3/4 cups All-Purpose Flour
  • 2 cups Rolled Oats
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 1/2 teaspoons Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ginger
  • 1/4 teaspoon Cloves

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until fluffy. Mix in pumpkin, egg, and vanilla.
  3. In another bowl, whisk together flour, oats, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Stir dry ingredients into wet mixture until just combined. Chill dough for 30 minutes.
  5. Scoop dough onto prepared sheets, spacing 2 inches apart. Bake 12–14 minutes.
  6. Let cool on baking sheet for 5 minutes, then transfer to wire rack.
  7. Serve warm or at room temperature with your favorite drink.

  • Chill dough for thicker cookies.
  • Do not use pumpkin pie filling.
