2 pounds chicken wings
1 cup pineapple juice
1/2 cup brown sugar
1/4 cup soy sauce
1/4 cup apple cider vinegar
1/4 cup sliced jalapeños (fresh or pickled)
2 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh pineapple chunks (for garnish)
Chopped green onions (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
Rinse and pat dry the chicken wings. Place them in a large mixing bowl.
In a separate bowl, whisk together the pineapple juice, brown sugar, soy sauce, apple cider vinegar, sliced jalapeños, minced garlic, onion powder, smoked paprika, salt, and black pepper until well combined.
Pour the marinade over the chicken wings, ensuring they are fully coated. Let them marinate for at least 15 minutes. For deeper flavor, marinate for up to 2 hours in the refrigerator.
Line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the baking sheet. Arrange the marinated wings on the rack, discarding any leftover marinade.
Bake the wings in the preheated oven for 25-30 minutes, or until the wings are golden brown and crispy. Flip them halfway through the cooking time for even crispiness.
If desired, brush additional marinade on the wings during the last 5 minutes of baking for extra flavor.
Once cooked, remove the wings from the oven and let them rest for a few minutes.
Transfer the wings to a serving platter and garnish with fresh pineapple chunks and chopped green onions.
