  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg

  • Red food coloring
  • ½ cup powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the dough into two equal portions. Leave one portion plain and add red food coloring to the other, mixing until evenly colored.
  7. Wrap each portion of dough in plastic wrap and refrigerate for about 30 minutes.
  8. On a lightly floured surface, roll out each dough portion into a rectangle about ¼ inch thick.
  9. Place the red dough on top of the plain dough and gently press together. Roll the dough tightly into a log.
  10. Wrap the log in plastic wrap and refrigerate for another 30 minutes.
  11. Remove the log from the fridge and slice it into ¼-inch thick rounds.
  12. Place the cookie slices on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden.
  13. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
  14. If desired, dust the cooled cookies with powdered sugar for an extra festive touch.
