Ingredients

Scale
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 3/4 cup creamy peanut butter (divided)
  • 1 cup powdered sugar (divided)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons heavy cream
  • 3/4 cup chocolate chips
  • 1 tablespoon heavy cream (for ganache)
  • Crushed peanuts (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, milk, oil, and vanilla. Mix until smooth. Stir in boiling water (batter will be thin).
  4. Pour batter into liners, filling each about 2/3 full. Bake for 18–20 minutes. Let cool completely.
  5. Mix 1/2 cup peanut butter with 1/2 cup powdered sugar to make the truffle center. Roll into 12 balls.
  6. Remove a small core from each cooled cupcake and insert a truffle ball. Replace cupcake tops.
  7. Melt chocolate chips with 1 tablespoon heavy cream until smooth. Spoon over cupcakes as ganache.
  8. Beat remaining peanut butter, butter, powdered sugar, and cream until fluffy to make the frosting.
  9. Pipe frosting onto cupcakes and top with crushed peanuts if desired. Serve and enjoy!

Notes

  • Store cupcakes in an airtight container at room temperature.
  • Use natural peanut butter for a healthier option.
  • For a richer ganache, add more chocolate chips.
