1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon dried thyme
1 teaspoon salt

Instructions
Prepare the cabbage by removing outer leaves and cutting vertically through the core into 1 to 1.5-inch thick steaks. Reserve any smaller pieces.
In a small bowl, whisk together olive oil, garlic powder, smoked paprika, onion powder, dried thyme, salt, and black pepper to create the spice rub.
Lay cabbage steaks on a parchment-lined baking sheet and generously brush both sides with the spice rub, pressing gently to adhere.
Arrange steaks on the baking sheet, ensuring they are not overcrowded, and place in a preheated oven at 400°F (200°C).
Roast for 20-30 minutes, flipping halfway through, until fork-tender and edges are caramelized.
