Transform simple cabbage into a delicious and tender steak with a flavorful garlic and spice rub, roasted to perfection.

Ingredients

Scale
  • 1 large green or red cabbage
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: grated Parmesan cheese, red pepper flakes, or fresh parsley

Instructions

  1. Prepare the cabbage by removing outer leaves and cutting vertically through the core into 1 to 1.5-inch thick steaks. Reserve any smaller pieces.
  2. In a small bowl, whisk together olive oil, garlic powder, smoked paprika, onion powder, dried thyme, salt, and black pepper to create the spice rub.
  3. Lay cabbage steaks on a parchment-lined baking sheet and generously brush both sides with the spice rub, pressing gently to adhere.
  4. Arrange steaks on the baking sheet, ensuring they are not overcrowded, and place in a preheated oven at 400°F (200°C).
  5. Roast for 20-30 minutes, flipping halfway through, until fork-tender and edges are caramelized.
  6. Remove from oven, let rest briefly, then transfer to a serving platter. Add optional toppings like Parmesan cheese, red pepper flakes, or fresh parsley.
