  • 1 cup water
  • 2 ½ tablespoons granulated sugar
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup chopped roasted nuts (hazelnuts, almonds, or pecans)
  • ½ cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • Vegetable oil, for frying
  • Nutella, for dipping or filling

Instructions

  1. In a medium saucepan, bring the water, sugar, salt, and butter to a gentle boil. Add the flour all at once and stir vigorously until the dough forms and pulls away from the sides of the pan.
  2. Transfer the dough to a bowl and let it cool slightly. Beat in the eggs one at a time until smooth and glossy. Stir in the vanilla extract.
  3. Heat about 2 inches of vegetable oil in a deep pot to 350°F (175°C).
  4. Transfer the dough to a piping bag fitted with a star tip. Pipe 1–2 inch pieces directly into the hot oil, cutting them with scissors. Fry until golden brown, about 2–3 minutes per side. Remove with a slotted spoon and drain on paper towels.
  5. In a shallow dish, combine the coating sugar and cinnamon. Roll the warm churro bites in the mixture until evenly coated.
  6. Sprinkle the warm churros with finely chopped roasted nuts.
  7. Serve the nutty churro bites warm with Nutella for dipping or filling.

Notes

  • Any roasted nuts can be used; hazelnuts complement Nutella well, but almonds or pecans are also good choices.
  • These are best served fresh. Leftovers can be crisped up in the oven.
