  • 4 cups vegetable broth
  • 2 tablespoons chili powder

  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish (optional)
  • Sour cream or Greek yogurt, for serving (optional)
  • Shredded cheese, for serving (optional)

Instructions

  1. Rinse the dried pinto beans and soak them overnight in water. Drain before using.
  2. Prepare the Vegetables: Dice the onion, garlic, bell pepper, carrots, and celery.
  3. Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add the onion, garlic, bell pepper, carrots, and celery. Sauté for about 5 minutes until softened.
  4. Combine Ingredients in Crockpot: In the crockpot, add the soaked pinto beans, sautéed vegetables, diced tomatoes, vegetable broth, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper.
  5. Mix all the ingredients until well combined.
