  • 2 cups egg noodles

  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
  2. Add the chicken breasts to the pot, seasoning with salt, pepper, and dried thyme. Cook for about 5-7 minutes on each side until browned.
  3. Pour in the chicken broth, ensuring the chicken is fully submerged. Bring to a boil, then reduce the heat to a simmer.
  4. Allow the chicken to simmer for about 15 minutes or until fully cooked through. Remove the chicken from the pot and shred it using two forks.
  5. Stir in the egg noodles and cook according to package instructions, usually about 6-8 minutes.
  6. Once the noodles are cooked, lower the heat and stir in the heavy cream and shredded cheddar cheese until melted and combined.
  7. Return the shredded chicken to the pot, adding the ranch seasoning mix and baby spinach if using. Stir until the spinach wilts.
  8. Taste the soup and adjust seasoning with additional salt and pepper, if necessary.
