1 ½ cups granulated sugar
¾ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup whole milk
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup brewed coffee (cooled)
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking soda, and salt. Whisk until well blended.
In another bowl, whisk together the whole milk, vegetable oil, eggs, vanilla extract, and cooled coffee until fully combined.
Gradually add the wet ingredients to the dry ingredients, stirring until smooth and no lumps remain.
Fold in the semi-sweet chocolate chips for an extra burst of chocolate goodness.
Pour the batter evenly into the prepared cake pans.
Place in the preheated oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Once baked, remove from the oven and allow the cakes to cool in their pans for 10 minutes. Then, transfer them to wire racks to cool completely.
While the cake cools, make the frosting. In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, alternating with the heavy cream, until smooth. Stir in the vanilla extract.
Once the cakes are completely cool, place one layer on a serving platter. Spread a generous amount of frosting on top. Add the second layer and frost the top and sides of the cake.
Optionally, sprinkle some chocolate shavings or chocolate chips on top for an elegant touch.
