A cheesy, layered Mexican casserole filled with seasoned ground beef, black beans, corn, salsa, and tortillas — baked to perfection for the ultimate comfort food feast.

Ingredients

  • 1 pound ground beef
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 6 large flour tortillas, cut in halves or quarters
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 small onion, chopped
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Sauté chopped onion in olive oil over medium heat until soft. Add ground beef and cook until browned. Stir in taco seasoning, salsa, beans, and corn. Simmer for 5 minutes.
  3. Spoon a layer of meat mixture into the dish. Top with tortilla pieces to cover.
  4. Add a layer of cheese and dollops of sour cream. Repeat layers until ingredients are used, ending with cheese on top.
  5. Cover with foil and bake for 20 minutes. Uncover and bake another 10 minutes until bubbly and golden.
  6. Let rest for 5–10 minutes before slicing. Garnish with cilantro and extra sour cream, if desired.
  7. Serve hot with chips, guacamole, or salad.
