Ingredients
Scale
4 large onions (yellow or sweet)
½ cup unsalted butter, softened
2 tablespoons Cajun seasoning
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish, optional)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Onions: Peel the onions and trim the tops and bottoms. Cut a small “X” in the bottom of each onion to help them cook evenly.
Make the Cajun Butter: In a mixing bowl, combine the softened butter and Cajun seasoning. Mix until well blended.
Coat the Onions: Place the onions on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Generously top each onion with the Cajun butter mixture.
Roast the Onions: Roast the onions in the preheated oven for 40-45 minutes, or until they are tender and caramelized. You can baste them with the melted butter halfway through for extra flavor.
Notes
Garnish with fresh parsley before serving if desired.
