1 pound flank steak
2 cups cooked quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced (any color)
½ cup feta cheese, crumbled
¼ cup olive oil
2 tablespoons lemon juice
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
Season the flank steak with salt and pepper. Allow it to sit at room temperature for about 10 minutes.
Heat a skillet over medium-high heat. Add a drizzle of olive oil and sear the steak for about 4-5 minutes on each side for medium-rare. Adjust cooking time based on your preference.
Remove the steak from the skillet and allow it to rest for at least 5 minutes. This helps the juices redistribute.
While the steak is resting, prepare the quinoa according to package instructions if it’s not already cooked.
While the quinoa cooks, dice the cucumber, halve the cherry tomatoes, and chop the bell pepper.
Once rested, slice the steak against the grain into thin strips.
In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper to taste.
In a large serving bowl or individual bowls, layer the cooked quinoa, sliced steak, diced cucumber, halved tomatoes, and diced bell pepper.
Sprinkle crumbled feta cheese over the top of the bowls.
Pour the olive oil and lemon dressing over each bowl, ensuring everything is well-coated.
If desired, sprinkle fresh parsley on top for added color and flavor.
