  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • ½ cup Kalamata olives, pitted and sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and set aside to cool.
  2. While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  3. In a large mixing bowl, combine the cooked chicken, cooled pasta, cherry tomatoes, cucumber, bell pepper, olives, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper until well combined.
  5. Pour the dressing over the pasta mixture and toss gently to coat all the ingredients evenly.
  6. Gently fold in the crumbled feta cheese, being careful not to break it apart too much.
