1 pound ground chicken
1 cup breadcrumbs (preferably whole wheat)
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg
2 tablespoons olive oil (for frying)
Optional: Tzatziki sauce for serving
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, chopped parsley, chopped mint, minced garlic, cumin, coriander, paprika, salt, black pepper, and the egg. Mix until well combined.
Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet.
In a large skillet, heat the olive oil over medium heat.
Carefully add the meatballs to the skillet in batches, ensuring not to overcrowd the pan. Brown them on all sides for about 5 minutes.
Once browned, transfer the meatballs back to the baking sheet and place them in the preheated oven. Bake for an additional 15-20 minutes, or until cooked through.
Ensure the internal temperature of the meatballs reaches 165°F (75°C).
Remove from the oven and allow the meatballs to cool slightly before serving.
Notes
Serve with optional tzatziki sauce for added flavor.
These meatballs can be stored in the refrigerator for up to 3 days.
