  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth, lemon juice, and lemon zest. Bring the mixture to a simmer.
  4. Reduce the heat to low and stir in the heavy cream and butter. Allow the sauce to simmer gently for a few minutes until it thickens slightly.
  5. Return the cooked chicken to the skillet, coating each piece with the creamy sauce. Cook for an additional 2-3 minutes to warm through and meld the flavors.
