4 chicken thighs, bone-in and skin-on
4 chicken drumsticks
1 large onion, chopped
2 cloves garlic, minced
1 bell pepper, sliced (red or yellow)
1 carrot, chopped
1 zucchini, sliced
1 can (14 oz) diced tomatoes
1 cup chicken broth
1/2 cup dry white wine (optional)
2 tablespoons olive oil
1 tablespoon Italian seasoning
Salt and pepper to taste
Fresh basil for garnish
Instructions
Season the chicken thighs and drumsticks with salt, pepper, and Italian seasoning.
In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the chicken pieces and brown them on all sides for about 5-7 minutes.
Once browned, remove the chicken and set it aside. In the same pan, add chopped onion, garlic, bell pepper, carrot, and zucchini. Sauté until softened, about 5 minutes.
If using white wine, pour it into the skillet to deglaze the pan, scraping up any brown bits for added flavor.
Stir in the diced tomatoes (with juice) and chicken broth. Mix well.
Place the browned chicken back into the skillet. Ensure it’s submerged in the sauce.
Cover and let it simmer on low heat for about 30-35 minutes, or until the chicken is cooked through and tender.
Taste and adjust seasoning as needed. You can add more salt, pepper, or Italian seasoning according to your preference.
Once done, remove from heat and garnish with fresh basil.
