- 1 pound shrimp, peeled and deveined
- 1/2 cup cornstarch
- 2 egg whites
- 1/2 cup walnuts
- 1/2 cup sugar
- 1/4 cup water
- 1/4 cup mayonnaise
- 2 tablespoons sweetened condensed milk
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 2 tablespoons chopped green onions
- Oil for frying
- Fill a deep pan or wok with oil and heat to 350°F. Prepare paper towels or a wire rack for draining.
- In a small saucepan, combine sugar and water. Simmer, then add walnuts and cook for 2–3 minutes. Remove and cool on parchment.
- Whisk egg whites in a bowl until frothy. Add cornstarch and mix. Coat shrimp in this batter evenly.
- Fry shrimp in batches until golden brown and crispy, about 3–4 minutes per batch. Drain on prepared rack.
- In another bowl, whisk together mayonnaise, condensed milk, honey, and lemon juice until smooth.
- Toss hot shrimp with the sauce gently until coated just enough.
- Top with candied walnuts and chopped green onions. Serve immediately.
