Easy Healthy Portuguese Chicken and Rice is a flavorful dish made with chicken, rice, and vegetables.

  • 4 boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 1 can (14 oz) diced tomatoes, drained
  • 2 cups low-sodium chicken broth
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken thighs or breasts and sear for about 5-7 minutes on each side, or until golden brown. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion, garlic, and bell pepper. Sauté for about 3-4 minutes, until the vegetables soften.
  4. Stir in the rice, paprika, oregano, salt, and pepper. Cook for an additional 2-3 minutes, allowing the rice to toast slightly.
  5. Pour in the diced tomatoes and chicken broth, mixing well to combine all ingredients.
  6. Place the seared chicken back into the pot, ensuring it is submerged in the liquid.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the rice is cooked and has absorbed the liquid.
