Grilled Salsa Verde Pepper Jack Chicken is a flavorful and easy dish that combines marinated chicken with spicy pepper jack cheese, perfect for any meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded pepper jack cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large bowl, combine the salsa verde, olive oil, garlic powder, onion powder, cumin, salt, and black pepper. Add the chicken breasts and coat them thoroughly. Cover and refrigerate for at least 30 minutes.
  2. Preheat your grill to medium-high heat (about 375°F to 400°F).
  3. Remove the chicken from the marinade and let any excess marinade drip off.
  4. Place the chicken breasts on the preheated grill. Cook for about 6-7 minutes on one side.
  5. Turn the chicken breasts over and cook for an additional 6-7 minutes or until the internal temperature reaches 165°F.
  6. In the last 2 minutes of cooking, sprinkle the shredded pepper jack cheese generously over each chicken breast. Close the grill lid to melt the cheese.
  7. Once the chicken is fully cooked and the cheese is melted, remove the chicken from the grill. Let it rest for a few minutes.
  8. Optionally, garnish with fresh cilantro before serving.

  • For extra flavor, marinate the chicken overnight.
  • Adjust the spice level by using a different type of cheese.
