Greek Stuffed Onions: An Incredible Ultimate Recipe

Ingredients

Scale
  • 4 large onions
  • 1 cup cooked rice or quinoa
  • 1 cup chopped spinach (fresh or frozen)
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 lemon (juiced)
  • 1 cup vegetable broth (for baking)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel the outer skin from the onions. Cut off the top and bottom, then carefully scoop out the insides using a spoon, leaving about 1/2 inch of onion intact to create a shell.
  3. Finely chop the onion insides and sauté them in olive oil with minced garlic until translucent.
  4. In a large bowl, combine the cooked rice or quinoa, sautéed onion, chopped spinach, crumbled feta cheese, parsley, oregano, lemon juice, salt, and pepper. Mix well to combine.
  5. Stuff each onion shell with the filling mixture, pressing down to pack it in tightly.
  6. Place the stuffed onions upright in a baking dish. Drizzle with remaining olive oil and pour vegetable broth into the bottom of the dish.
  7. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the onions are tender and slightly browned.
  8. Carefully remove the onions from the oven and let them cool for a few minutes before serving.
