  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 packages (3 oz each) Jello (choose your favorite flavors/colors)

Instructions

  1. Cream together the softened butter and granulated sugar in a large mixing bowl using an electric mixer on medium speed for about 2 to 3 minutes, until light, fluffy, and pale yellow.
  2. Add the egg and beat on medium speed for another minute until fully combined. Add the dry Jello powder to the bowl and mix on low speed until just combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, about a third at a time, mixing on low speed until just incorporated.
  4. Scrape the dough onto plastic wrap, form into a ball, flatten into a disk, wrap tightly, and refrigerate for at least 30 minutes. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Roll the chilled dough into 1-inch balls and place about 2 inches apart on the prepared baking sheets.
  6. Bake for 9 to 12 minutes, or until edges are lightly golden and centers are set. Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
