Ingredients
Scale
1 cup unsalted butter
2 cups granulated sugar
1 cup brown sugar, packed
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon salt
1 cup semi-sweet chocolate chips
2 tablespoons instant coffee granules
½ cup heavy cream (for frosting)
1 ½ cups powdered sugar (for frosting)
2 tablespoons brewed coffee (for frosting)
Optional: chocolate shavings or nuts for garnish
Instructions
Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
Melt the butter in a medium saucepan over low heat. Remove from heat and let it cool slightly.
In a large bowl, combine the granulated sugar, brown sugar, and melted butter. Stir until well blended.
Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and stir until smooth.
In another bowl, sift together the flour, cocoa powder, baking powder, salt, and instant coffee granules.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Gently fold in the semi-sweet chocolate chips, ensuring they are evenly distributed throughout the batter.
Pour the brownie batter into the prepared baking pan, spreading it evenly.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Remove from the oven and let the brownies cool in the pan for about 15-20 minutes. Then, lift them out using the parchment paper and let them cool completely on a wire rack.
In a medium bowl, whisk together the heavy cream, powdered sugar, and brewed coffee until smooth and creamy.
Once the brownies are completely cool, spread the coffee frosting evenly over the top.
If desired, sprinkle chocolate shavings or chopped nuts on top for added texture and flavor.
Once frosted, cut the brownies into squares and serve!
