Ingredients

Scale
  • 2 tablespoons coconut oil, or avocado oil
  • 1 red or yellow white onion, diced
  • 1 serrano pepper or jalapeño pepper, finely diced
  • 1/2 teaspoon salt
  • 1.5 pounds boneless, skinless chicken thighs, cut to bite-size pieces
  • 4 garlic cloves, minced
  • 2 inch piece of fresh ginger, peeled and grated (or minced)
  • 23 Tablespoons curry powder
  • 1/2 teaspoon Indian red chili powder, or regular chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon black pepper
  • 1 teaspoon garam masala
  • 1 (14.5 oz) can crushed tomatoes
  • 1 1/2 pounds sweet potatoes, cut into 1-inch pieces
  • Optional: Fresh cilantro, chopped, for garnish
  • Optional: Lime wedges, for garnish
  • Optional: Steamed jasmine rice or brown rice, for serving
  • Optional: Naan bread or roti, for serving

Instructions

  1. Cut chicken thighs into bite-sized pieces. Dice the onion and serrano/jalapeño pepper. Mince the garlic and grate the ginger. Peel and cut the sweet potatoes into 1-inch cubes.
  2. Heat coconut oil in a large pot over medium-high heat. Sear the chicken in batches until golden brown. Remove the chicken and set it aside.
  3. Reduce heat to medium. Add the onion to the pot and sauté until translucent. Stir in the minced garlic, grated ginger, and diced serrano/jalapeño; cook for 1-2 minutes until fragrant.
  4. Add the curry powder, Indian red chili powder, ground cumin, turmeric powder, black pepper, and garam masala to the pot. Cook for 1-2 minutes, stirring, until fragrant.
  5. Return the chicken to the pot. Stir in the crushed tomatoes and sweet potatoes. Add the salt. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the sweet potatoes are tender and the chicken is cooked through. Stir occasionally.
  6. Taste and adjust seasoning with additional salt if needed. Serve hot, garnished with fresh cilantro and lime wedges if desired, alongside steamed rice or naan bread.
