1 lb boneless, skinless chicken breasts
1 tablespoon vegetable oil
1 cup bell peppers (sliced)
1 cup broccoli florets
1/2 cup green onions (chopped)
3 cloves garlic (minced)
1/4 cup soy sauce
1/4 cup honey
1 tablespoon sriracha sauce (adjust for heat preference)
1 tablespoon rice vinegar
1 teaspoon ginger (grated)
Sesame seeds (for garnish)
Instructions
Cut the chicken breasts into bite-sized pieces.
In a bowl, combine soy sauce, honey, sriracha, rice vinegar, and grated ginger. Add chicken and let it marinate for about 10–15 minutes.
In a large skillet or wok, heat vegetable oil over medium-high heat.
Add the marinated chicken to the skillet. Cook for about 5-7 minutes, stirring frequently until the chicken is cooked through and slightly caramelized.
Add sliced bell peppers, broccoli florets, and minced garlic to the skillet. Stir-fry for another 5 minutes until the veggies are tender but still crisp.
Pour any remaining marinade into the skillet, stirring to combine with the chicken and vegetables. Cook for an additional 2 minutes, allowing the sauce to thicken slightly.
Remove from heat and sprinkle with chopped green onions and sesame seeds before serving.
Transfer the Firecracker Chicken to a serving platter or bowl.
