  • 1 cup crumbled feta cheese
  • 4 large eggs
  • 1 cup milk
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional: ½ cup grated parmesan cheese (for topping)

Instructions

  1. Start by preheating your oven to 350°F (175°C) and grease a baking dish (about 9×9 inches) with olive oil.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the chopped spinach to the skillet and sauté until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a large bowl, whisk together the eggs and milk. Stir in the breadcrumbs, oregano, salt, and pepper. Then, add the sautéed spinach mixture and crumbled feta cheese to the bowl. Mix until well combined.
  5. Pour the mixture into the prepared baking dish, spreading it out evenly. If desired, sprinkle grated parmesan cheese on top for an extra cheesy finish.
  6. Place the casserole in the oven and bake for 30-35 minutes, or until the top is golden brown and set in the center.
  7. Once done, remove the casserole from the oven and let it cool for about 5-10 minutes before slicing.
