3 medium tomatoes, finely chopped
1 small red onion, finely chopped
1 small red bell pepper, finely chopped
1 green chili pepper, deseeded and chopped
2 cloves garlic, minced
1/4 cup flat-leaf parsley, finely chopped
1 tablespoon tomato paste
1 tablespoon red pepper paste (biber salçasi)
2 tablespoons lemon juice
3 tablespoons olive oil
1 teaspoon pomegranate molasses (optional)
1/2 teaspoon salt
Instructions
Finely chop the tomatoes, red onion, red bell pepper, green chili, and parsley. Mince the garlic.
In a mixing bowl, combine all chopped vegetables and garlic.
Add tomato paste and red pepper paste. Mix gently.
Pour in lemon juice, olive oil, and pomegranate molasses if using.
Season with salt and stir everything until evenly combined.
Let the mixture sit for at least 30 minutes to allow flavors to meld.
Taste and adjust seasoning if needed before serving.
