Instructions
Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
In a large mixing bowl, beat the eggs with the granulated sugar and 1 teaspoon of vanilla extract until light and fluffy.
In another bowl, sift together the cocoa powder, flour, baking powder, and salt.
Gradually fold in the dry ingredients into the egg mixture until well combined. Be careful not to overmix.
Pour the batter into the prepared jelly roll pan, spreading it evenly. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, remove the cake from the oven and let it cool in the pan for about 5 minutes. Then, gently roll the cake with the parchment paper still attached and set it aside to cool completely.
In a mixing bowl, whip the heavy cream with powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form.
Once the cake is completely cool, carefully unroll it from the parchment paper.
Evenly spread the whipped cream filling over the entire surface of the cake.
Starting from one end, gently roll the cake back up without the parchment paper. Wrap it in plastic wrap and chill in the refrigerator for at least 30 minutes.
Pour chocolate ganache over the chilled cake, allowing it to drip down the sides.
For the finishing touch, dust the top with cocoa powder or powdered sugar.
