200g (7 oz) dates, pitted and chopped
250ml (1 cup) boiling water
1 tsp baking soda
75g (⅓ cup) unsalted butter, softened
150g (¾ cup) brown sugar
2 large eggs
150g (1¼ cups) all-purpose flour
1 tsp baking powder
1 tsp vanilla extract
½ tsp salt
200ml (¾ cup) heavy cream (for serving)
Instructions
Preheat your oven to 180°C (350°F). Grease an 8-inch square cake pan or a similar-sized dish with butter.
In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 10 minutes until softened.
In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter-sugar mixture, mixing until just combined.
Stir in the softened date mixture (along with the water) and the vanilla extract until well combined.
Pour the batter into the prepared baking dish, smoothing the top with a spatula.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
While the pudding bakes, make the toffee sauce by melting the butter in a saucepan over medium heat. Stir in the brown sugar and heavy cream, bringing it to a simmer. Cook for 3-4 minutes until slightly thickened. Remove from heat and stir in the vanilla extract.
Once baked, remove the pudding from the oven and allow it to cool in the pan for about 10-15 minutes.
Cut the pudding into squares and serve warm, drizzled with the toffee sauce and topped with heavy cream.
