½ cup white chocolate chips (optional, for drizzling)
Instructions
Preheat your oven to 350°F (175°C). Line a mini muffin pan with paper liners.
In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, and salt until well combined.
In another bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until smooth.
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.
Spoon the red velvet batter into the prepared mini muffin pan, filling each liner about 2/3 full.
Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
In a medium bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
Once the red velvet bites have cooled completely, use a small spoon or knife to create a small well in the center of each bite. Fill the well with the cheesecake mixture.
If desired, melt the white chocolate chips and drizzle them over the filled bites for an extra touch of sweetness.
Place the filled bites in the refrigerator for at least 30 minutes to set before serving.
Notes
These bites are best served chilled.
Optional white chocolate drizzle adds extra sweetness.
