1/4 cup maple syrup or honey

1 cup dark chocolate chips (dairy-free if desired)

Instructions
In a food processor, blend the pitted Medjool dates until they form a sticky paste.
Mix in the peanut butter (or almond butter), maple syrup (or honey), and vanilla extract until well combined.
Fold in the mixed nuts, ensuring they are evenly distributed throughout the date mixture.
Line a small baking dish with parchment paper. Press the date and nut mixture into the dish, creating an even layer about 1/2 inch thick.
Place the dish in the refrigerator for about 30 minutes to firm up the mixture.
Melt the dark chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
