  • 2 lbs boneless, skinless chicken thighs
  • 1 cup bourbon
  • 1 cup chicken broth
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • ¼ cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 4 cups cooked rice (for serving)
  • Sliced green onions (for garnish)

Instructions

  1. Place the boneless, skinless chicken thighs in the bottom of the crockpot.
  2. In a bowl, combine the bourbon, chicken broth, brown sugar, soy sauce, ketchup, apple cider vinegar, minced garlic, minced ginger, black pepper, and salt. Stir until well mixed.
  3. Pour the marinade over the chicken, ensuring all pieces are well coated.
  4. Cover and set the crockpot on low for 4-6 hours or high for 2-3 hours.
  5. When the chicken is cooked through and tender, shred it using two forks directly in the crockpot.
  6. Stir in the cooked rice until well combined. Let it cook for an additional 10-15 minutes to heat the rice through.
  7. Garnish with sliced green onions for added flavor and presentation.
