  • 2 pounds baby potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • Fresh herbs (rosemary, thyme, or parsley), for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Begin by preheating your oven to 450°F (230°C).
  2. In a large pot, add baby potatoes and cover them with water. Bring to a boil and cook for 15-20 minutes until fork-tender.
  3. Once cooked, drain the potatoes and let them cool for a few minutes.
  4. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  5. Place the potatoes on the baking sheet. Using a fork or the bottom of a glass, gently smash each potato until flattened but still intact.
  6. In a small bowl, mix the olive oil, minced garlic, salt, pepper, and paprika (if using). Drizzle this mixture over the smashed potatoes.
  7. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the potatoes are golden brown and crispy.
  8. Remove from the oven and sprinkle with fresh herbs and grated Parmesan cheese, if desired.
  9. Allow them to cool slightly before serving.
