2 pounds baby potatoes (or small Yukon Gold potatoes)
¼ cup olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika (smoked or regular)
Salt and pepper, to taste
Fresh herbs (such as rosemary or parsley), for garnish
Instructions
Start by preheating your oven to 450°F (232°C).
Place the potatoes in a large pot and cover them with cold water. Add a generous amount of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
Drain the potatoes and let them sit for a few minutes to cool slightly and steam off excess moisture.
Line a baking sheet with parchment paper. Place the potatoes on the sheet and gently press down on each one with a fork or the bottom of a glass until flattened but not completely broken apart.
Drizzle olive oil over the smashed potatoes. Sprinkle garlic powder, onion powder, paprika, salt, and pepper evenly over them.
Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the edges are golden brown and crispy.
Remove the potatoes from the oven and let them cool for a few minutes. Garnish with fresh herbs before serving.
