8 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup cherry pie filling
10 egg roll wrappers
1 egg, beaten (for sealing)
Oil for frying
Powdered sugar, for dusting (optional)
Instructions
In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Beat until smooth and creamy.
Gently fold in the cherry pie filling, being careful not to break up the cherries too much.
Lay out the egg roll wrappers on a clean, flat surface. Place a small bowl of water next to you for sealing.
Take one egg roll wrapper and place about 2 tablespoons of the cheesecake mixture in the center.
Brush the edges of the wrapper with the beaten egg. Fold the bottom corner over the filling, then fold in the sides tightly. Roll it up to seal completely.
In a deep frying pan or pot, heat oil over medium heat until it reaches 350°F (175°C).
Carefully place the egg rolls in the hot oil, a few at a time. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy.
Remove the egg rolls from the oil and place them on a paper towel-lined plate to absorb any excess oil.
If desired, dust the warm egg rolls with powdered sugar for an added touch of sweetness.
Allow the egg rolls to cool slightly before serving.
